A Shout Out for Zucchini!

I love zucchini! Fried zucchini, grilled zucchini, zucchini bread, zucchini fritters and especially these sweet zucchinin cupcakes!  My zucchini plants have been very productive this summer, despite the lack of moisture.

This recipe is delicious and easy. Even Bugs and Squirrel liked the cupcakes, but Squirrel just couldn't get enough of the icing.



 The ingredients are simple and easy.

I use my Cuisinart to shred the zucchini. It's the easiest to use and takes the least amount of time.

Combine the wet ingredients in a medium bowl.

Enjoy these yummy cupcakes.
