Hunk of Meat Monday: Leftover Easter Ham

The joy of a holiday.

The hustle and bustle of preparing food and cleaning the house.

The conversation with family and friends.

The excitement of a child getting to see his cousins or search for Easter Eggs.

And the dreaded cleanup.

And the leftovers.

What do you do with the left over ham from Easter dinner? I have a solution: freeze your ham and save it for a later date.
Then use it for Mini Frittatas.



This recipe is simply, quick and easy. My kids make these wonderful little bites for breakfast on Saturdays. It's a great way to use up leftover ham.

Bugs is cracking the eggs.


Squirrel shredding the cheese.


Squirrel sampling the shredded cheese. I used Monterey Jack, but you could mix it up with anything. Imagine Pepper Jack?



Drop by tablespoonfuls into a greased mini tart pan.


What a quick and great Saturday morning breakfast!!
